Ube Roll Using Wheat Flour

I thought of baking an Ube Roll out of the Purple Yam spread that I bought before. The absence of all purpose flour in our kitchen made me wonder and tried using wheat flour instead. 
 Wheat Flour Ube Roll
  
Ingredients:
- ½ cup wheat flour
- 6 tbsp purple yam
- 4 pcs. eggs, separate white from yolk
- 13 tbsp granulated white sugar
- 3 tbsp confectioner’s sugar
- 1 tsp baking powder
- ½ tsp vanilla extract
- ½ tsp red food color (optional)
- ½ tsp blue food color (optional)

What you need:
- Mixing bowl
- Hand mixer
- Parchment / wax paper

Procedure:
- Preheat oven to 350 degrees fahrenheit
- In a bowl, combine wheat flour and baking powder, mix well and set aside

- In a separate bowl, combine egg yolk and vanilla extract, using an electric mixer, mix them
- Gradually add first 5 tbsp of granulated sugar, set aside

- In another bowl, beat egg whites until semi peak
- Gradually add 8 tbsp granulated sugar, mix until soft peak
- Add the food colors and beat again to combine the color evenly (this is optional, I just thought of changing the color of the mixture)
- Set aside

- Add the egg yolk mixture to the egg white mixture; and gradually add wheat flour and baking powder mixture
- Grease the wax or parchment paper and put in a flat baking tray
- Pour the mixture and spread evenly
- Bake for 10minutes

- Sprinkle confectioner’s sugar on the top part, cover with another wax paper of the same size
- Use another tray to cover and then flip, making the part with confectioner’s sugar face down
- Sprinkle the (now) top part with confectioner’s sugar and roll (tuck the wax paper and roll, making it remember the form of the roll), set aside to cool down
 










- Once cooled down, unroll the cake and spread the purple yam on top
 






- Roll again (this time remove the wax paper)
- Sprinkle with confectioner’s sugar
- Enjoy :)
