Palitaw

Palitaw is a Filipino term, from the root word “litaw” which means float. Wikipedia defines Palitaw as a small flat sweet rice cake eaten in the Philippines.

During my childhood, whenever my grandmother cooks Ginataang Halo Halo (another Filipino dessert composed of different fruits combined with coconut milk), she sees to it to prepare Palitaw too. Palitaw is made of ground sticky rice.

I’ve been craving for this for long until one of my colleague’s wife – Noemi invited me over her place to eat. She taught me how to do it and the ingredients but since I’m not born a good cook, I still search for the recipe online and see to it to follow the measurement all the time. Nice move for beginner like me.

Ingredients:
- 2 cups glutinous rice flour
- ½ cup sugar
- 1 cup water
- 1 cup grated coconut
- ½ cup sesame seed

Procedure:
- combine flour and water
- mold 2tbsp to ball figure, flatten
- boil the flatten mold till floats
- combine sugar and sesame seed
- dip in coconut and serve!

When I uploaded the picture in Facebook, Herbert - one of my American FB friends said that it is also called Mochi
– a Japanese rice cake which is one of Japan’s traditional food for the Japanese New Year.


This is best with Orange Juice!

Lengua De Gato

Dictionary.reference.com explains Lengua (noun) as (1) a member of a group of Indian people living in the Gran Chaco area of Paraguay; and (2) any of several languages spoken by these people. Wikipedia explains it as Beef Tounge or particularly food. When we search for the whole phrase Lengua De Gato we will be directed to different results with almost the same meaning – Cat’s Tongue cookie.

Lengua De Gato is a Spanish phrase which means Cat’s Tongue. It is perhaps named as such because of its shape which is similar to the tongue of a cat. This is made as thin, long, and sweet cookie. In the Philippines, we can find similar items in pastry stores more so in Pasalubong shops, particularly in Baguio city.



My Version :)

Ingredients:
- ½ cup softened butter
- ½ cup white sugar
- 2 egg whites
- ¼ tsp salt
- ½ tsp vanilla extract
- 1 cup all purpose flour

You will need:

- baking tray



- piping bag

- wax paper
Procedure:- preheat oven to 375o F
- cream the butter using electric mixer
- add sugar and mix for two (2) minutes
- add the egg whites and mix for four (4) minutes
- add salt and vanilla extract
- gradually add the flour, mix for three (3) minutes
- place the mixture in the piping bag using a round tip
- place a wax paper on a baking tray, squeeze each piece of about 3 inches in length
- bake for 9-10 minutes
- remove from the oven, cool down, and serve!


This can be an alternative to commercialize biscuits and snacks. Good for snack time or in between heavy meals, better with coffee.

Pinaputok na Tilapya

Pinaputok is a Filipino term which means blast or pop. The reason why this menu is called as such is that since it is wrapped with an aluminum foil together with all the other ingredients, you will hear popping sounds while frying until it is cooked. The need to use a foil is that the creamy combination of the vegetables and oyster sauce will be prevented from mixing with more cooking oil.

Ingredients:
- Medium to large size tilapia
- Lettuce
- Ginger
- Tomato
- Onion
- 5-6 tbsp Oyster sauce
- Salt and pepper to taste
- Chili powder (optional)

Procedure:
- cut an aluminum foil good enough to cover the size of the fish
- place the lettuce, make it as the base
- place the ginger, tomato, and onion on top of the lettuce
- add salt, pepper, and chili powder to the fish and put on top of the ingredients
- pour in the oyster sauce
- using the sides of the aluminum foil, wrap the fish enough to cover it
- heat cooking oil in a pan
- deep fry for 5-8mins
- serve and enjoy!


Best with hot rice and Mango juice :)

Sizzling Mixed Seafoods

Welcome to my very first food blog here in Lutuin at Kainin. I will be giving you the recipe of my own version of Sizzling Seafoods.

One of my relatives used to cook sizzling seafoods for us and his version is really very tempting and delicious as well. With my interest in how he cooks it, while being here in Oman with limited seafoods, I tried applying his recipe with what I can buy from the supermarket – frozen mixed seafoods :)

Ingredients:- 1 pack of mixed seafoods
- 6tbsp of catsup
- 4tbsp of chili or hot sauce
- 1 egg
- Salt and pepper to taste
- Garlic
- Cooking oil

Procedure:- in a pan, heat cooking oil
- add garlic and cook until color turns light brown
- add the mixed seafoods and stir fry for 5 minutes
- add catsup, chili sauce, salt, and pepper
- turn off the heat
- add egg
- serve and enjoy!

Why Lutuin at Kainin?

Good day everyone!

I'm beginning to be interested in cooking and have found passion in it so I decided to create this blog where I can write the recipes I use and the cooking tips which I can share with my readers. Although some of the recipes were only tried using some online websites, I still want to share specifically for my friends who ask about how I did it. Of course, I won't forget acknowledging my sources :)

Personally, aside from my recipe book (which I patiently handwrite whenever I try new recipes), I want to keep online records of the foods that I cook. Lutuin at Kainin is a Filipino phrase which means to cook and eat, which simply tells that we can cook what we want to eat. This will help me never forget how I did it, help my friends know about it, and hope to give others some ideas as well.

Initially, I will post here some of my favorite foods that I have tried and hope to level up soon with other foods that others want to try as well.

Above all, I want to explore and learn more about cooking so I can let my children taste the foods that I cook too.

Be patient in cooking because in the end the foods that you cook will really pamper your craving stomach.
